How is a dealcoholized wine made?
Dealcoholized wines start out as traditional wines: regular, fully fermented, and with alcohol. But, they have their alcohol removed after the fact through different, but highly specialized and precise techniques, of which vacuum distillation and the spinning cone column are the most common methods.
The latter method for example is used by Cognato in combination with their high-quality (and Fairtrade certified) South African grapes. It captures the flavor components first before the alcohol is removed and blends it back in afterwards to retain its complexity. The end result? A sophisticated, dry wine-like profile that retains its natural structure, acidity and earthiness: full of flavor, but alcohol free. Skål!
